                   Fish Fry Recipe

    
                                       Ingredients:

                          ·         Fish ( pomfret, seer or any fish)  - 6 to 8 pieces
                          ·         Onion                                 - ½
                          ·         Ginger                               - small piece                
                          ·         Garlic                                - 2 or 3
                          ·         Cinnamon                          - a small piece
                          ·         Cloves                              - 2
                          ·         Coriander seeds                 - 1 tsp
                          ·         Cumin seeds                     - ½ tsp
                          ·         Pepper corns                     - ½ tsp
                          ·         Fennel seeds                     - ¼ tsp
                          ·         Salt to tase

                                      To Marinate:
·         Turmeric pwd                     - ¼ tsp
·         Red chilly pwd                   - ½ tsp
·         Lemon juice                       - 1 tsp
·         Salt to taste.
·         Oil to fry
                                 Method
         1.     Make a coarse paste of onion, garlic, ginger, cinnamon, cloves, coriander                                      seeds, cumin, pepper and fennel seeds, without adding water.
                   2.  Clean and Wash the fish well and drain water completely.
                   3.     Marinate the fish with turmeric pwd, red chillypwd, salt and lemon juice.
                   4.     Leave it for about 30 minutes for marination    
                   5.     Then apply the masala paste prepared in step 1 and marinate for 10 more 
                        minutes.
                   6.     Heat a dosa girdle ( preferably non-stick )
                   7.     Add the masala coated fish pieces and drizzle oil to sides.                                                       8.     Use high flame initially and low flame to cook
                  9.     Fry the fish on both sides till it turns golden brown and crispy from                                                 outside.
                 10.  Serve with finely sliced onions and lime.
                 11.  Delicious & spicy Fish Fry ready to relish.
                 12.  It makes a lipsmacking combo with hot steamed rice.

Prawn Recipe



Prawns Curry/పచ్చీ రోయల  కూర /जिहिंगा का सालन 


Ingredients for preparing Prawn:
  • Prawn : 1 kg (medium size)
  • Mustard seeds : 1 tsp
  • Garlic paste : 2 tbsp
  • Fresh curry leaves : 2 tbsp (chopped)
  • Tomato : 1 piece (chopped)
  • Roasted cumin seed powder : 1 tsp
  • Roasted coriander seed powder : 1 tsp
  • Turmeric powder : 1 tsp
  • Coconut : 1 piece (grated)
  • Red Chilli Powder : 1 tsp
  • Tamarind : 50 gm
  • Salt : to taste
  • Oil : 2 tbsp
  • Lemon juice : 1 tsp

Procedure for preparing Prawn:

  • Shelled without head & tail & wash.
  • Marinate with salt & lemon juice. Keep away.
  • Soak grated coconut in 1 cup of hot water. Squeeze for the milk.
  • Soak tamarind in 1 cup of warm water. Strain & keep the juice aside.
  • Heat 2 tbsp of oil.
  • Add whole mustard seeds. When it stops spluttering, add curry leaves.
  • Add garlic paste. Stir well in low flame.
  • Add cumin seed powder, coriander powder, turmeric powder, red chilli powder & salt. Stir well.
  • Add tomato, prawn.
  • Cover & cook for 10 minutes.
  • Add coconut milk & tamarind juice & mix well.
  • Remove from the heat & serve.
 

Fish Curry

Fish Curry/मचिली  का सालन  / చేపల  కూర 


Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4 -5




Ingredients:

  • 1 lb. cat fish ,cut into 2 " pieces
  • 2 cups of tamarind juice 
  • 2 cup, chopped onion
  • 1 cup, chopped tomato
  • 2 tbsp red chili powder 
  • 4 green chilies
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds (methi)
  • 1 tsp cumin seeds
  • 2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • curry leaves : 4 to 5
  • 3 tsp oil
  • Salt, as required
  • sugar, 1/4 tsp

Preparation :

  • Cut and clean the fish thoroughly, cut into 2" pieces
  • Add the chili powder in tamarind juice, add salt, 1 tsp turmeric add green chilies, mix well. Keep aside.
  • Heat 3 tsp oil in a non stick skillet. Add mustard seeds and cumin seeds  in the oil. When it starts to sputter, add the fenugreek seeds ; once you get a sweet and sour flavor and the seeds turn golden brown, add curry leaves and onion. Add a pinch of salt so that the onion gets cooked quickly. When onion turns golden brown, add tomato and cook for another 2-3 minutes.
  • Add cumin powder, coriander powder and turmeric powder, cook for a minute.
  • Add the mixture of tamarind juice,leave it for a couple of minutes till the sauce is well cooked.(You should not get any smell of tamarind once properly cooked).Add a pinch of sugar while the sauce is simmering.
  • Add fish at the end, cook for another 10 minutes in medium flame.
  • Serve hot with rice.
